The new kitchen at the Austin Hospital in West Heidelberg is a state of the art
production kitchen, which will be providing one third of Melbourne's hospitals with meals.
Capable of producing over two million meals a day, the new facility is comprised of a large
production kitchen which employs the latest technology and features including a fully
ventilated ceiling with a series of adjoining cool rooms and storage rooms, a test kitchen for
the preparation of test meals and smaller quantity meals, a unique trolley wash system which
to date is the only one in Australia, and a dual loading dock for incoming and outgoing product.
A series of freezers and cool rooms within the facility utilise
a new Glycol cooling system, which allows fresh food to be
tumble cooled and snap frozen to guarantee freshness until
dispatch to the sub-kitchens within the individual hospitals.
The trolley wash and sanitising service facilities use an e-water
system which runs a mild current through the water to clean
and sterilise equipment.
