Demolition and installation of a new kitchen including all new appliances, upgraded services for the gas and electric cooking implements, one additional exhaust fan hood and the reuse of two existing exhaust fans, ceramic floor and wall tiles, and epoxy finished ceilings. Significant structural alterations to the existing premises and the installation of a new suspended slab. Concurrently extensive additional works to the South Dining Room took place in the original historic building. Construction took place during school holiday's within stringent time constraints.
